*Position Summary*
This is a collaborative role in managing and developing the culinary identity of our three outlets as well as our catering/conference division, requiring a combination of leadership skills, culinary expertise, creativity, and financial sense. The Executive Sous Chef works with the EC to create action plans to improve operational performance, along with the personal performance of individual reports. This position leads and mentors a team of Sous Chefs, Pastry Chefs, Cooks and Dishwashers. Creating and initiating training programs, while contributing to the overall culinary vision of the property, the Executive Sous Chef recognizes that our product reflects our people and works to build a cohesive culinary team. Equally comfortable with food and labour cost, this position requires daily review of financial metrics using existing technology and systems, while consistently searching for operational efficiencies. The Executive Sous Chef position is a member of the Culinary Leadership Team and offers learning opportunities and exposure to further pathways in Culinary Leadership.

Recognized as a key player in leadership, the Executive Sous Chef contributes to planning of yearly operational and capital budgets pertaining to foodservice at Nita Lake Lodge. Managing these budgets throughout the year is a key component to the position to ensure key metrics are achieved and if possible, improved upon. This position also contributes to purchasing and vendor relations, ensuring that the business has access to the most suitable product or service at a suitable price. The Executive Sous Chef champions a regional product lexicon in a financially responsible fashion, consistently exploring new vendor and product opportunities. Inventory and costing systems are reviewed for accuracy in collaboration with the EC and Food & Beverage Administrator. Contributing to administrative functions, the Executive Sous Chef encourages and promotes exceptional timeliness and response times.

The Executive Sous chef builds a culture of success with clear pathways and expectations communicated to all within the department. Job descriptions are reviewed frequently and edited as needed, as is the Culinary Department handbook ? which is intended to offer kitchen specific details for all team members. On and off cycle reviews and conversations are conducted in partnership with other culinary management members. The Executive Sous Chef also recognizes the importance of feedback internally and collaborates to create departmental EOS in conjunction with the management team. Throughout the year, this position also leads and delegates additional team and knowledge building activities such as in house product sessions, field trips and guest speakers. This position is key in fostering a communicative and knowledge sharing culture amongst both the BOH and FOH teams. Along the way, the Executive Sous Chef searches out and recruits exceptional talent and attitude of all skill levels, consistently building succession connections.
*Product, Brands and Marketing*
This senior role is responsible for leading the team towards refining the brand promise in all three outlets, as well as banquet services. The Executive Sous Chef tasks Sous Chefs to create responsibly with the ongoing goal of merging brand and authenticity to increase both guest and team member satisfaction. This position encourages brave and thoughtful thinking throughout the creative process, continuously circling back to finance for final proof of product prior to releasing to guests. Brand books are referred to frequently to review standards, execution and overall look and feel of product.
